Aebleskivers

Aebleskivers are one of my favorite family recipes! They are a bit of a project and time investment but so worth it! It was about an hour of time from start to finish. This recipe does require an aebleskiver cast iron skillet. For this recipe, we doubled it for 4 people and had some leftovers. It made much more then what is in the picture.

Ingredients:

  1.  2 Eggs (yolks and whites separated)
  2. 2 Cups all purpose Flour
  3. 1 TB White Sugar
  4. 1/2 tsp Baking Soda
  5. 2 tsp Baking Powder
  6. 1/2 tsp Salt
  7. 2 Cups Buttermilk
  8. 4 TB Melted Butter
  9. Nutmeg (optional)
  10.  Oil or Cooking Spray

Steps:

  1. Beat only the egg whites in an electric mixer until they have a stiff peak, then set aside.
  2. Mix all the dry ingredients in a separate bowl. (Flour, Sugar, Baking Soda, Baking Powder, and Salt).
  3. Once the dry ingredients are mixed- add in the egg yolks, buttermilk, and melted butter and whisk all together.
  4. Gently fold in the fluffy egg whites in with the rest of the ingredients. At this point, you can add in nutmeg or any other spices you would like. We did some plain and some with nutmeg.
  5. Once your cast iron pan is heated, lightly pam spray (or oil) each circle. Put about 2 tbsp of batter in each. Once they start getting bubbly,  you will flip each one over- we used a skewer to do this. Repeat til all batter is used.
  6. Serve by dipping them in butter and syrup or however you’d like!!
